Mousse aux Fraises (Strawberry Mousse)

Try this French strawberry recipe; it has a different texture from what Snow White did the other day. It has a much creamy taste, like eating melted ice-cream. This is an easy recipe even Babe who is a cook dummies can do it.

Ingredients:
1 box (250g) strawberry (washed and de-stalked)
1 tbsp lemon juice
1/2 cup sugar
1 cup whipping cream
2 eggs white

Method:
Blend the strawberry (keep 3 strawberries for garnishing) with lemon juice and sugar. Beat the whipping cream till thick and stiff, gently mix the cream into the strawberry puree. Keep the strawberry and cream mixture in the fridge while beating the eggs white with pinch of salt. When the eggs white turn to a stiff foam fold it gently into the strawberry and cream mixture. Spoon the mousse into serving glass/bowl and refrigerate for at least 2 hours. Garnished with pieces of fresh strawberry and serve chilled.

Leggo's Wine Infused Creamy Sundried Tomato Sphaghetti


Rapunzel got drunk over this sphaghetti. This Leggo's creamy sundried tomato pasta sauce was infused with Chardonnay. This is the first time Snow White playing with it.

Saute 4 tablespoon of the sauces with chicken cubed, capsicum, shredded carrot,onion. Add in a bowl of water and let it simmer a while. Lastly add in sugar and salt to taste. Top the pan fried butter prawn on the cooked sphagetti and pour the sauces over. The sphaghetti has a sweet tomato taste with a deep favour of wine.

Try the wine infused pasta sauce if you like your food with a zest of wine favour.

Prata Hot Dog Wrap

This is the second time we having the hotdog wrap. The vegetables used this time include shredded carrot, slice tomato, big yellow onion, tomato and lecttue. Snow White also deep fried the potato chip as a side dish.

Steam Pandan Cake

We did another steam cake. Instead of using the banana, we added in 1 tbsp of the pandan paste. The colour of cake is delightful and texture is as moist.

Mushrooms Soup with Bread

Rapunzel did some changes in the mushrooms soup that we used to cook. This is much more smoother and with stonger mushroom taste.

Ingredients:
250g fresh shitakes mushrooms, sliced
1 can button mushrooms, diced
30g butter
1 clove garlic, crushed
1 big yellow onion, diced
2 tbsp plain flour
1/2 cup fresh milk
1 ltr chicken stock
salt and pepper to taste
50g Broccoli, cut in small pieces (boiled and drained)

Method:
1. Heat up the butter and fry the garlic and onions till soft.
2. Add in the shitakes mushrooms, stir fried for 4 minutes over high heat.
3. Scope up some mushroom in a plate for later use then stir in the button mushrooms. Stir fried for a minutes and add in flour and mix well till all the mushrooms are well coated.
4. Pour in the chicken stock and bring to boil.
5. Bring the soup to the blender and blend well till smooth.
6. Return the soup to a pot, simmer a while and add in salt and pepper to taste.
7. Stir in the milk when it is boiled.

Garnished the soup with the balance of the mushroom, add in the broccoli and sprinkle some oven grilled shredded chicken. The mushroom soup is ready to serve.

We also bought a french baguette, apply some homemade garlic spread and sent it to oven. They goes perfectly well with the mushroom soup.

Green Curry Chicken

Green Curry is a popular thai cuisine which is one of Babe's favourite dish. The curry can be as hot as red curry but with a zest of sweetness like mee soto.

Rapunzel used to blend the green curry paste herself but it is quite time consuming so we get the ready pack paste from supermarket.

Ingredients:
1 packet of Asian Home Gormet Green Curry
9 chicken drumlets
1/2  teaspoon of dried basil leave
4 lady fingers
1/2 red capsicum
1 sprig coriander leaves, chopped
1 Tbsp oil
200ml water

Method:
1 Heat oil in a saucepan or wok and fry the green curry paste for one minute over medium high heat.
2 Stir in chicken until well coated and chicken is half-cooked – three minutes. Reduce heat to medium, then pour over coconut milk followed by 200 ml water.
3 Add lady finger and capsicum, cook for 15minutes then sprinkle coriander leaves and basil leaves. Green Curry Chicken is ready to serve.

The Green Curry Chicken go very well with rice. Snow White also fried a plate of mixed vegetables (bean sprouts, 1/2 red capsicum, 2 stalk of celery, 1/2 carrot--leftover stock in the fridge) with salted fish to go with it. Look at the color combination, very appetising!

Fried Bee Hoon

Ingredients:
Bee Hoon (soaked)
Prawn (washed and shelled , halved)
Carrot (shredded)
Cabbage (shredded)
2 eggs
4 garlic (minced)
4 onion (minced)
2 chilli (minced)
Seasoning (1 tbl dark sweet sauce,2 tbl soya sauce, salt, pepper and 2 tbl fish sauce mixed with half bowl of water)

Method:
1. Saute the garlic and onion till fragrant then add in the eggs and scrambled.
2. When the scrambled eggs turn slightly brown, add in the chilli.
3. Add in the prawn and fried till it cooked.
4. Then add in the carrot and cabbage and fried for a while.
5. Toss in the Bee Hoon and seasoning.
6. Continue to fried till the Bee Hoon soften and cooked.

Garnished the Bee Hoon with fried shallot and spring onion and served hot.
