Green Curry Chicken

Green Curry is a popular thai cuisine which is one of Babe's favourite dish. The curry can be as hot as red curry but with a zest of sweetness like mee soto.

Rapunzel used to blend the green curry paste herself but it is quite time consuming so we get the ready pack paste from supermarket.

Ingredients:
1 packet of Asian Home Gormet Green Curry
9 chicken drumlets
1/2  teaspoon of dried basil leave
4 lady fingers
1/2 red capsicum
1 sprig coriander leaves, chopped
1 Tbsp oil
200ml water

Method:
1 Heat oil in a saucepan or wok and fry the green curry paste for one minute over medium high heat.
2 Stir in chicken until well coated and chicken is half-cooked – three minutes. Reduce heat to medium, then pour over coconut milk followed by 200 ml water.
3 Add lady finger and capsicum, cook for 15minutes then sprinkle coriander leaves and basil leaves. Green Curry Chicken is ready to serve.

The Green Curry Chicken go very well with rice. Snow White also fried a plate of mixed vegetables (bean sprouts, 1/2 red capsicum, 2 stalk of celery, 1/2 carrot--leftover stock in the fridge) with salted fish to go with it. Look at the color combination, very appetising!
