Chicken Porridge with Fried Egg

We have chicken porridge today. This is the first time using the short grain rice to cook the porridge and it turn out smoother then the normal rice.

Ingredients:
1 cup of peanut, soaked
1 preserve egg
2 slice of ginger
1 cup of short grain rice, wash and drained then marinate with pinch of salt and oil.
Cubed a cup of chicken fillet and marinate with salt and pepper

Method
1) Boiled the water with ginger and peanut.
2) Add in the rice when water boiled.
3) When the rice turn soft add in the chicken.
4) Add in a pinch of salt, pepper and dash of sesame oil when the porridge almost cooked.
5) Stir in the preserve egg before serve.
Garnish the porridge with shallots, spring onion, fried white baits and a small piece of fermented bean curd. Top the porridge with fried eggs. The eggs are fried with big onion, dried prawn, mince garlic and chili.

Dry Yong Tau Foo Mee Pok









Snow White is down under weather and resting at home. Babe and Rapunzel got no mood to cook anything too complicated as only the two of us eating. Since there is some Mee Pok left in the fridge, Rapunzel cooked Dry Yong Tau Foo Mee Pok. As usual we pan fried the yong tau foo, cooked the sauce, toss the Mee Pok with the sauce and add in the yong tau foo. Lastly garnished the Mee Pok with shallots and spring onion, an simple and healthy lunch is ready to serve.

Chinese Mushroom Soup

Everyone seemed to be down under the weather so we have chinese mushroom soup today. As usual the ingredients overflowed the soup pots. The ingredients include; dry shitake mushroom, peanut, enoki, carrot, cabbage, tomato, tofu, red dates and wolfberries.

Chocolate Mousse

Babe was craving for chocolate mousse since last week. After doing search from the internet for an easy recipe, I managed to whip up this dessert at home without Snow White and Rapunzel help. Yeh!

Ingredients
1 small bowl of semi-sweet chocolate chips
2 tablespoon butter
3 tablespoon sugar
1 teaspoon vanilla essence
1 tablespoon lemon juice
2 teaspoon gelatin dissolve in 1/4 cup warm water
3 eggs separated
1 cup whipping cream

Method
1) Melt the chocolate and butter in a double boiler at low heat.
2) When the chocolate mixtures melted whisked in the egg yolk one at a time till well mixed.
3) Removed the chocolate mixtures from the heat and add in vanilla essence, lemon juice and gelatin.
4) Leave the chocolate mixture to cool at room temperature.
5) Whipped the whipping cream to thick and chilled.
6) Beat the egg whites with pinch of salt till seeing rising foam, add in the sugar and beat till soft peaks form.
7) Fold in the whites slowly inside the cool chocolate mixtures till the whites are well incorporated then fold in the whipped cream.
8) Spoon into the muffin aluminum cup, garnished with roasted almond, raisin or fresh fruit and refrigerated for 4 hours or overnight.

I managed to whip up 10 muffin cups with the above portion of ingredients.

















The kids love it and so do I, especially eat with fresh strawberry.


















Going to reserve 2 cups for Snow White and Rapunzel and hear their verdict.

We have sushi today since there is still some balance of seaweed. This time we managed to get ready packed Unagi from the supermarket so can make more variety of sushi.

9 O'clock Flower (九点花)

New addition in our garden; 9 o’clock flower (九点花) also know as moss rose or rose moss. It is an easy flower to grow and bloom whenever there is direct sun light. They usually bloomed in the morning and closed in the late afternoon.




Pad Thai


Pad Thai is a Thai dish of stir fried rice noodles with eggs, fish sauce, tamarind juice, chili and any combination of shrimp, chicken, tofu, bean sprout and peanuts. Snow White wanted to try cooking this dish since last month but we cannot get the Thai grass noodle till this week. She cooked according to this recipe.


Hmm…the taste is there but the noodle turn out a bit soggy. This probably due to over cook while trying to fry the eggs as we did not have high heat stove.

Chicken Rendang

A traditional Malay dish of chicken coated in spicy coconut gravy, a bit like dry curry. The ingredients of this dish need to cook many hours but Rapunzel manage to cook the dish in an hours, she used ready made rendang paste.


INGREDIENTS

  • 2 teaspoons oil
  • 50g rendang paste
  • half chicken pieces
  • coconut milk
  • Kaffir leave


METHOD

1. Heat oil in a large saucepan. Stir in rendang paste and cook for 1 minute.

2. Add chicken pieces, stir to coat in paste. Add coconut milk stir well. Bring to the boil then reduce heat, add in kaffir leaves, cover and simmer for 30 minutes.

3. Remove lid and simmer another 25-30 minutes or until chicken is tender. Serve with white rice.

Bee Hoon Soto Ayam


Bee Hoon Soto Ayam aka Malay Chicken Bee Hoon Soup is another signature dish of Rapunzel. This aromatic soup has to be eaten hot and it got a sweet taste of chicken flavor.

Ingredients

  • 8 chicken wings (cleaned)
  • Soto Paste, Rapunzel prepared at home. (Blend coriander powder, cumin powder, onion, garlic, ginger and pepper. Fried the blended ingredients till fragrant then add water and salt.)
  • Bean Sprouts (boiled and drained)
  • Bee Hoon (boiled and drained)
  • 1 lemongrass
  • 2 pandan leaves
  • 2 blue gingers
  • 3 chili padi
  • 2 tbsp sweet soya sauce
  • salt and sugar to taste


Method

Boiled Soto Paste with water, lemon grass, blue ginger and pandan leaves in a pot. Put in the chicken when water boiled. Cook over medium heat till the chicken is tender. Add sugar to taste.

Put the cooked Bee Hoon in a plate, top with bean sprouts and pour the soup over the plate. Garnished with fried onion, spring onion, parsley and sprinkled shredded crab stick.

Serve the Bee Hoon with Sambal (made of chili padi, garlic and sweet sauce).

This dish is normally served with Begedil (potato cutlet) but we did not manage to get it this time round so I added the shredded crab stick instead.

Avocado Milkshake

Avocado Milkshake




Ingredients
2 avocados, pulped
200 ml fresh milk
100 ml Palm sugar syrup
Ice shavings
2 tablespoons lemon juice

Method
Blend avocadoes with milk, lemon juice and ice. Pour about 2 tablespoons palm sugar syrup into a tall glass. Pour avocado blend into the tall glass and serve with long spoon.


Seafood Soup

This time Snow White used multi-cooker for seafood soup. Must say that the taste is a lot better today as the variety is quite hearty. The prawn, squid, fish, crabstick, egg tofu and lots of vegetable turned-up more tastier .... love this soup!

Basil Minced Meat Mee Pok

The basil minced meat never tastes as good as when the basil is fresh picked from the garden. Its exotic peppery flavour was fully released when stir fries with the minced chicken. Ingredients

  • Mee Pok
  • 200g minced chicken (season with pepper and salt)
  • 1 bowl of freshly picked basil (washed and drained)
  • Chye Sim
  • 4 clove garlic (minced)
  • 2 bird eye chillies (minced)
  • 3 onion(minced)
  • 1/2 cup parsley (chopped)
  • 4 shallots
  • 1 stalk of spring onion
  • 3 slice ginger (striped)
  • fish sauce
  • bean paste
  • dark and light soy sauce
  • water
Method

1. Cooked the mee pok and rinse under cold water. Drained, add some sesame oil and put aside.

2. Heat oil in a wok and stirred fried the shallot for garnishing.


3. Saute the ginger, garlic, onion, spring onion and chili till the fragrant out then stir in bean paste.



4. Add the minced chicken and stirred fried till white.

5. Add 2 small bowl of water, soy sauce, fish sauce and dark sauce to taste.

6. Add in the basil and stirred in some starch and let it simmer for 5 minutes.

7. Boiled the chye sim and place aside with the mee pok.

8. Pour the basil minced meat over the mee pok and garnished with sesame, fried shallot and parsley.

Basil Minced Meat Mee Pok is ready to serve.

Onde Onde

Grilled Stingray

This is our another seafood dish Grilled Stingray describes cooking method using banana leaves which we grilled using oven (modern method). Quite simple and delicious. This recipe is from Snow White and Rapunzel done her job by preparing the ingredients...Not bad, taste good.





Marinated the stingray with curry powder, chili powder and some herbs for an hour.





Place the stingray on banana leave and put into the oven and grilled till cooked.






Serve with rice, achar and fried cabbage.

Sushi


It been awhile we have eat sushi so Snow White and Rapunzel wanted to try making it. After some research from the Internet, they managed to whip up the sushi without any hassle.

The two important thing of making sushi is the rice and fillings.

The fillings we used in this sushi are mainly; seaweed, cucumber, carrots, avocado, egg, tuna, crab stick, mayonnaise, fried sesames.

Cook the short grain rice. Add the vinegar, salt and sugar to the cooked rice and allow the rice to cool before rolling into sushi.

Roll the sushi with the fillings you want and be adventurous in your creation.

If you want you can try do the sushi egg by pan fried the egg with sugar and salt or sushi vinegar.

Serve the sushi with wasabi mixed with soya sauce.
