Mee Siam is popular in Malaysia and Singapore. It is normally serve with tamarind gravy, which give a combination of spicy, sweet and sour tastes. Rapunzel do the dry version of Mee Siam which is not common in Singapore.

Babe tried the dry version once in Malaysia and been craving for it. Rapunzel's dry Mee Siam a bit different as it is less salty and more spicy.

Dry Yong Tau Foo Mee Tai Mak

Yong Tau Foo is fermented bean curd stuffed with fish paste. No, we did not make the Yong Tau Foo, Rapunzel get them fresh from the market this morning.

This is an Hakka dish usually drenched in clear and soupy broth and dipped with chili or sweet sauce but Snow White cooked it in a different style with Mee Tai Mak.

The Yong Tau Foo is pan fried till golden brown, boiled over the vegetables and Mee Tai Mak till soft, drained and set aside for later used. Heat the oil, saute the garlic, ginger then add in 2 cup of water mixed with dark soy sauce, oyster sauce, fish sauce & sesame oil. Thicken the sauce with starch and the sauce is ready to pour over the Mee Tai Mak. Toss the sauce with the Mee Tai Mak then add in the Yong Tau Foo and garnished with coriander, spring onion and fried shallot. Tah Dah! Dry Yong Tau Foo Mee Tai Mak is ready to serve.

Love the sauce and it is yummy to go with the crispy fried Yong Tau Foo. I cleared my plate within 15 minutes.

Chicken Bak Kut Teh

Bak Kut Teh is an herbal with peppery taste soup. It is usually used pork rib but since one of us does not take pork we use chicken instead. We used the A1 Bak Kut Teh spices left over from Rapunzel's home. The recipe is simple and easy to follow.

Rinsed and cleaned the chicken. When the water is boiled put in the meat, button mushroom and Bak Kut Teh Spices and cooked for 30minutes or more. We also added garlic, red dates and wolf berries to sweeten the soup. Add in soya sauce, oyster sauce, salt and pepper according to your taste.

Boiled the mee suan (flour vermicelli) in another pot of water and dished out in separate bowl. Place the cooked Xiao Bai Cai on the mee suan and pour the boiling soup over. Garnished with coriander and Bak Kut Teh is ready to serve.

This is Snow White first attempt cooking the mee suan. The soup is nice but the mee suan a bit soggy. Anyone have tips on handling the mee suan?

  3. Pan fried king oyster mushroom and shitake mushroom with oyster sauce.

  5. Toss the spaghetti with the mixtures well.
