Kway Teow Goreng

Today we had another asian cuisine - Fried Kway Teow, cooked by Rapunzel, well it's little spicy, yet Babe can take it so do Rapunzel but for Snow White it has no problem coz she love spicy food. Kway Teow is a common food served in almost all Malay and Chinese stalls. The ingredients and cooking method varies according to available ingredients and preference. The one Rapunzel cooked today is a simple version using only basic ingredients...

INGREDIENTS:

1 kg Kway Teow
6 Shallots
3 cloves Garlic
15 dried chillies
shelled Shrimps
1 tbls Sweet Soya Sauce
3 tbls Tomato Sauce
Bean Sprout
Chye Sim
Square Beancurd
3 eggs
Salt to taste
1 stalk Spring Onion + Chinese celery - chopped

METHOD:
  1. Blend shallots, garlic and dried chillies.
  2. Fry beancurd put aside and do the same for the fishcake.
  3. Beaten & fry eggs till soft but not dry and put aside.
  4. Fry the blend item until fragrant then add in shrimps.
  5. Add in tomato sauce, soya sauce, salt & continue stirring. (If you want moist fried noodle, add in 1/2 cup water)
  6. Add in bean sprout, Chye Sim & stir well.
  7. Add in beancurd & fishcakes then followed by the kway teow.
  8. Stir until noodles are evenly coated with sauce.
  9. Serve with Spring Onion + Chinese celery.
