Chicken Bak Kut Teh

Bak Kut Teh is an herbal with peppery taste soup. It is usually used pork rib but since one of us does not take pork we use chicken instead. We used the A1 Bak Kut Teh spices left over from Rapunzel's home. The recipe is simple and easy to follow.

Rinsed and cleaned the chicken. When the water is boiled put in the meat, button mushroom and Bak Kut Teh Spices and cooked for 30minutes or more. We also added garlic, red dates and wolf berries to sweeten the soup. Add in soya sauce, oyster sauce, salt and pepper according to your taste.

Boiled the mee suan (flour vermicelli) in another pot of water and dished out in separate bowl. Place the cooked Xiao Bai Cai on the mee suan and pour the boiling soup over. Garnished with coriander and Bak Kut Teh is ready to serve.

This is Snow White first attempt cooking the mee suan. The soup is nice but the mee suan a bit soggy. Anyone have tips on handling the mee suan?
