INGREDIENTS
- 12 pcs mid-joint chicken wings
- 2 tablespoons canola oil
- 1 plump stalks of lemongrass, tender white inner bulb only, cut coarsely
- 1 small red onion, minced
- 3 cloves garlic, minced
- 3 sliced ginger
- 1 tablespoon oyster sauce
- 1 tablespoon dark sauce
- 1 tablespoon Fish sauce
- 5 small dried red chillies, cut half
- 1 large capsicum, seeded and sliced cubed
- Half cup of water
- Salt and sugar to taste
DIRECTIONS
Heat the oil in the skillet. Add the lemongrass, onion, garlic, ginger and cook over high heat, stirring until fragrant. Add the dark sauce, oyster sauce, fish sauce, dried chillies, water; bring to a boil. Add the chicken to the sauce and simmer until heated through, lastly add capsicum. Simmer awhile then serve.
