Shepherd's Pie

This Shepherd's Pie is nice and easy. It's basically a layer of seasoned, cooked, chicken with gravy and mashed potatoes on top. Once it is baked in the oven, the top gets nicely browned - comfort food at its best!

To make this version of Shepherd's Pie all you will need to know is how to:

Mash Potatoes
5 medium potatoes
1/2 cup of milk
4 tablespoon of butter
1 dash of salt and pepper
1 teaspoon dried rosemary

Put the washed potatoes in sauce pan and cover with water adding 1 teaspoon of salt. Cover the pot and bring to boil. Turn down to simmer for 20 minutes. Drain the potatoes and peel. Add milk, butter, dried rosemary, salt and pepper and start mashing until the potatoes are creamy and lump free.

Chicken with Gravy.
Prepare the vegetables, two medium carrot, 4 celery stalk and a medium yellow onion. Diced and place in a bowl. Cubed the chicken fillet and marinate with pepper and salt. Minced 2 cloves of garlic and 1 small onion. Assemble the rest of the ingredients: 1 tablespoon of oyster sauce, 1 cubed of chicken stock and one tablespoon of flour.
Heat the pan and fry the minced garlic and onion, chicken stock, oyster sauce. Add the marinate chicken follow by diced onion, carrot and celery and stir until the vegetables are coated. Lastly add the flour to the mixture, mix and cook for a couple of minutes.

Pour the chicken mixture to the baking pan and covered with mashed potatoes. Place the shepherd's pie into the oven for about 30 minutes until golden brown.

Potato Chicken & Fried Celery with Rice

The celery is sautéed with minced garlic, dried prawn and a tablespoon of oyster sauce. Babe does not really like the taste of raw celery but when fried with dried prawn, the celery taste crunchy and sweet.


Fried the potato and put aside for later used. Stir fried the garlic, big onion then add in the chicken. When the chicken turned white, add in the fried potato. Reduce the heat and add in water, oyster sauce, dark sauce and salt to taste. Let it simmer for 30min or more till the chicken become tender and the potato turn soft. Before served, stir in the spring onion. The sauce is thickened by the potato and it is very appetizing to eat with white rice.

Chicken Porridge with Fried Egg

We have chicken porridge today. This is the first time using the short grain rice to cook the porridge and it turn out smoother then the normal rice.

Ingredients:
1 cup of peanut, soaked
1 preserve egg
2 slice of ginger
1 cup of short grain rice, wash and drained then marinate with pinch of salt and oil.
Cubed a cup of chicken fillet and marinate with salt and pepper

Method
1) Boiled the water with ginger and peanut.
2) Add in the rice when water boiled.
3) When the rice turn soft add in the chicken.
4) Add in a pinch of salt, pepper and dash of sesame oil when the porridge almost cooked.
5) Stir in the preserve egg before serve.
Garnish the porridge with shallots, spring onion, fried white baits and a small piece of fermented bean curd. Top the porridge with fried eggs. The eggs are fried with big onion, dried prawn, mince garlic and chili.

Dry Yong Tau Foo Mee Pok









Snow White is down under weather and resting at home. Babe and Rapunzel got no mood to cook anything too complicated as only the two of us eating. Since there is some Mee Pok left in the fridge, Rapunzel cooked Dry Yong Tau Foo Mee Pok. As usual we pan fried the yong tau foo, cooked the sauce, toss the Mee Pok with the sauce and add in the yong tau foo. Lastly garnished the Mee Pok with shallots and spring onion, an simple and healthy lunch is ready to serve.

Chinese Mushroom Soup

Everyone seemed to be down under the weather so we have chinese mushroom soup today. As usual the ingredients overflowed the soup pots. The ingredients include; dry shitake mushroom, peanut, enoki, carrot, cabbage, tomato, tofu, red dates and wolfberries.

Chocolate Mousse

Babe was craving for chocolate mousse since last week. After doing search from the internet for an easy recipe, I managed to whip up this dessert at home without Snow White and Rapunzel help. Yeh!

Ingredients
1 small bowl of semi-sweet chocolate chips
2 tablespoon butter
3 tablespoon sugar
1 teaspoon vanilla essence
1 tablespoon lemon juice
2 teaspoon gelatin dissolve in 1/4 cup warm water
3 eggs separated
1 cup whipping cream

Method
1) Melt the chocolate and butter in a double boiler at low heat.
2) When the chocolate mixtures melted whisked in the egg yolk one at a time till well mixed.
3) Removed the chocolate mixtures from the heat and add in vanilla essence, lemon juice and gelatin.
4) Leave the chocolate mixture to cool at room temperature.
5) Whipped the whipping cream to thick and chilled.
6) Beat the egg whites with pinch of salt till seeing rising foam, add in the sugar and beat till soft peaks form.
7) Fold in the whites slowly inside the cool chocolate mixtures till the whites are well incorporated then fold in the whipped cream.
8) Spoon into the muffin aluminum cup, garnished with roasted almond, raisin or fresh fruit and refrigerated for 4 hours or overnight.

I managed to whip up 10 muffin cups with the above portion of ingredients.

















The kids love it and so do I, especially eat with fresh strawberry.


















Going to reserve 2 cups for Snow White and Rapunzel and hear their verdict.

Sushi

We have sushi today since there is still some balance of seaweed. This time we managed to get ready packed Unagi from the supermarket so can make more variety of sushi.
