Banana Cake

Dessert for the day, Banana Cake. This recipe is easy to follow and the cake is moist and delicious. Try it, banana cake is a healthy way to feed the family and friends.

Ingredients:
125g Butter
120g Sugar
1 Cup Flour
1 Tablespoon Baking Powder
2 Large Eggs
40ml Milk
1 Teaspoon Vanilla Essence
3 Medium Mashed Bananas
1 Extra Banana, for topping

Method:
1. Pre-heat the oven and prepare two 7" x 3.5" paper loaf tray.
2. Cream butter & sugar until light and creamy.
3. Add eggs(one at a time) and beat until well combined.
4. Next stir in milk, mashed bananas & vanilla essence.
5. Then follow by the sifted flour & baking powder.
6. Mix well then pour into the baking tin or paper loaf tray and bake for 30 -40 mins or till golden brown.

No Egg Chocolate Cake

This No Egg Chocolate Cake is very easy to prepare in less than 15minutes.

Ingredients A:
1½ cup Self raising flour
3 tbsp Cocoa powder
1 tsp Baking powder
½ tsp Salt

Ingredients B:
1 cup Caster Sugar
5 tbsp Olive Oil
1 tsp Vanilla Essence
1 cup Water

Method:
1. Mixed Ingredients A thoroughly and set aside.
2. Mixed Ingredients B in another mixing bowl till sugar melted.
3. Pour Ingredients B gradually into Ingredients A and mixed evenly.
4. Pre-heat the oven for 10minutes.
5. Pour the mixture into a baking tin & top with some chocolate chips
6. Put into oven and bake for 40minutes.

The cake is crispy outside and moist inside like brownie.

3 Colors Butter Cake


This is the first time we bake cake using the oven toaster. It turn out to be very successful.

The butter cake is made using the creaming method, in which the butter(185g) and caster sugar(1cup) are first beaten till light and fluffy to incorporate air into the butter. Eggs(3) are then added gradually creating an emulsion, following by 1 tsp of vanilla essense, 250g self-raising flour and 1/2 cup of milk.

We added some fun into the cake. The batter was divided into 3 bowls; one bowl added in 1 tbsp of coco powder and another bowl added 1 tsp of pandan paste. Spoon each color batter into a greased baking tin alternatively.

Pre-head the toaster oven for 10 minutes then bake the the cake for 45 minutes.

The butter cake is very rich and moist.

Steam Pandan Cake

We did another steam cake. Instead of using the banana, we added in 1 tbsp of the pandan paste. The colour of cake is delightful and texture is as moist.

Steam Banana Cake

Ingredients:
3 eggs
100g sugar
3 ripe bananas, mashed
150g self raising flour
1/8 tsp Baking Soda
75g oil (unflavoured)

Method:
1. Shift together self-raising flour and baking soda and set aside.
2. Whisk eggs and sugar till flurry.
3. Mix in mashed bananas, beat till well combine.
4. Gently fold in the flour mixture and oil. Do not deflate the eggs mixtures.
5. Pour batter into baking tray.
6. Steam over high heat for 15mins or till an inserted satay stick come out clean.

Serve the cake warm as it is more soft and fluffy. A healthy cake with no bake.

Durian CheeseCake

This is not our first try to make a cheese cake, but the whole experience has just inspired us on making a no bake durian cheesecake. ...mm.. just look at the pic. the taste really good..


Ingredients for Durian Fillings:
250g Cream Cheese
50g Caster Sugar
250g Durian Flesh
1 tablsp Gelatine Powder
50ml Warm Water
125g Plain Yogurt
200g Whipping Cream

Methods:
1. Beat cream cheese, caster sugar until creamy and light, then add the durian flesh and continue to beat until well combined.
2. Next pour in the melted gelatine mixture and yogurt then stir till combined.
3. Lastly pour in the whipping cream and well mixed.
4. Pour the mixture into the prepared biscuit base tray and chill for at least 3 hours or overnight.

Ingredients For Crust:
200g Digestive biscuits, finely crust
70g Butter - at room temperature

1. Use a 7" X 7" square cake aluminium tray.
2. Combined the biscuits crumbs and butter then mixed well and press into cake tray and bake under 170c for 5mins. Let it cool and chill in the fridge.(about 20mins - 30mins).
