Creamy Cheese Spaghetti

This Cream Cheese Spaghetti is all time's favourite for family. It another creation of Snow White.

Ingredients :
12 big prawns, shelled
2 squid
1 capsicum, cubed
1 can button mushroom, cubed
1 tomato, cubed
2 slice Cheddar cheese
2 tbsp minced garlic
2 tbsp onion
1 tbsp dry basil
200ml fresh milk
1 tbsp flour
coriander
salt and pepper
1 handful spaghetti

Method:
1. Cook the spaghetti as per instruction and put aside.
2. In a wok, heat some olive oil and stir fried the onion and garlic.
3. Add in the prawn and follow by the squid, fried till fragrant.
4. Add the flour and fried till the prawn and squid well coated with the flour.
5. Add in the mushroom, capsicum and tomato and lightly fried.
6. Pour in the milk and add the cheese when the milk boiled.
7. Let the sauce simmer for a while and add in salt and pepper to taste.
8. Sprinkle the dried basil and the sauce is ready to pour over the spaghetti.

Garnished some coriander and the Creamy Cheese Spaghetti is ready to serve.

Mee Goreng

Rapunzel cooking one of her speciality Mee Goreng in Malay style. It is spicy hot but very yummy! The prawn is fresh and big and the Hong Kong Chye Sim is sweet and crunchy, Babe can't help taking a second serving.^^

Fried Seafood Spaghetti

As mentioned before fried spaghetti is a versatile dish which you can stuff anything to bulk up. This time we stuff it with mixed seafood, vegetables and fried with chili. It is very oriental taste with zest of chili hot.

Ingredients:
12 prawns
1 squid
50g mussels
200g spaghetti
mixed vegetables(carrot, lettuce, cai sim)
1 onion, wedged
4 cloves garlic, minced
3 shallots, minced
3 chili padi, minced
Sauce; mixed 1 bow of water with:
1 tbsp dark sauce
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice wine
1 tbsp dried basil
1 tbsp black pepper
sugar & salt to taste


Methods:
1. Cook spaghetti as per instructions and put aside.
2. Saute garlic, chili, onion & shallot till fragrant.
3. Add in the mixed seafood and fried till half cook.
4. Add in the vegetables and stir fried for 5 min.
5. Pour in the sauce and let it simmer for 5 min.
6. Toss in the spaghetti and simmer for another 5 minutes

Garnished with slice of cucumber and coriander and the mixed seafood fried spaghetti is ready to serve. We deep fried samosa as side dished too.

Grilled Fish & Fried Kang Kong

Another grilled fish dish which is slightly different from what Rapunzel cooked the other day. This time we used Ikan Kembong which is much cheaper and perfect for deep frying. Simply marinate the 4 Ikan Kembongs with 2 tsp turmeric powder, 1 tbsp chili powder, 1 tsp salt and 1 tbsp oil for 15 minutes or longer. Put it into the oven and grilled till golden brown.

Snow White also make dipping sauce separately to go with the fish.
Dipping Sauce:
2 tsp lemon juice
6 chili padi, minced
3 shallots, thinly slice
1 garlic, minced
1 tsp dark sauce
2 tbsp light soy sauce

The Kang Kong is fried by Babe...but with instruction from Rapunzel.:P
1. Heat the oil in a wok, stir fry the 2 clove garlic(minced) and 3 onion(minced).
2. Add 2 tbsp chili prawn paste and stir fried till fragrant.
3. Put in the stalk of Kong Kong, stir fried till slight soft then gradually stir in the leaves.
4. Add salt, sugar and fish sauce to taste.
5. Fry for another 3 minutes and the Kang Kong is ready to serve.

The crispiness of the fish and the tanginess of the dipping sauce are great combination. Eat with white rice and the fried kang kong make a perfect lunch.

Nyonya Laksa

This spicy curry-like noodle soup is one of Babe's favourite dish. I would love to have a second bowl if Rapunzel had cook enough, hee! Slurp!

Ingredients:
Rice Vermicelli, scalded and drained
150ml coconut milk
12 medium prawns
2 fish cakes, sliced
50g bean sprout, blanched
8 pcs small Tau Pok, halved
3 hard boiled eggs
3 sprig laksa leaves
1 cup dried prawns, grind
salt and sugar to taste
Grind the following into laksa paste:
2 garlic
5 shallots
1/2 tbsp turmeric
1 tbsp Galangal
4 candle nuts
1 stalk lemon grass
2 tsp Balachan
2 tbsp chili paste

Method:
1. Boiled the prawns in a pot of water till cooked.
2. Remove the prawns and set aside.
3. Add in laksa leaves into the pot of stock and simmer for 15 minutes.
4. Heat oil in wok and fry the laksa paste for 15-20 minutes.
5. Add in dried shrimp and stir fry for another 5 minutes.
6. Pour the paste and shrimp into the pot of boiling stock.
7. Gradually add in coconut milk and let it simmer till red oil surfacing.
8. Add salt and sugar to taste.
9. Add in the tau pok, fish cake and cooked for 2 minutes, let the tau pok absorb laksa gravy before serving.
10. Put rice vermicelli in a bowl, top with the prawn, bean sprout and egg.

11. Pour hot gravy over and serve immediately.

Chop some laksa leaves or shred some cucumber for garnishing if you like. Add chilli paste if your prefer your laksa to be more spicy.

Tom Yum Spaghetti

It another stock clearing day! So we just simply put up everything we can find in the fridge and come out with this Tom Yum Spaghetti. The Tom Yum taste is not strong but very spicy.

Ingredients:
Spaghetti
1½ tbsp Tom Yum Paste mixed with 1 cup of water
1 lemon grass, cut
3 kaffir leaves
50g button mushroom
1 tbsp garlic (minced)
1 tbsp onion (minced)
4 chili padis
9 prawns (halved)
1 fish cake (sliced)
cabbage (sliced)-optional

Method:
1) Cooked the spaghetti as per instruction and set aside.
2) Saute the garlic, lemon grass, kaffir leaves, onion and chili padis till fragrant. add in mushrooms and stir fry for about a minute or two.
3) Add in the prawn, fish cake and cabbage, stir fried till cooked.
4) Add the spaghetti followed by the tom yum mixture.
5) Let the spaghetti soaked up all the water and is of a dry consistency for 7-10 minutes.
6) Serve spaghetti in a plate and garnish with chopped coriander leaves.

Pineapple Fried Rice with Salted Egg Crispy Prawn

This Thai Heavenly Pineapple Fried Rice is done by Rapunzel. She did not add in the raisin but it is still as heavenly yummy. If you interested can try out this recipe.

This fried rice is supposed to be a real vegetarian Thai food but we eat with Salted Egg Crispy Prawn so we not having vegetarian lunch after all. This Salted Egg Crispy Prawn goes very well with the fried rice. The recipe can get from fenying's blog.

Indian Fish Curry

First of all I like to thank you to Babe and Snow White for their compliment of my Indian Curry Fish. Although it is spicy, but this succulent fresh fish gently simmered in a spicy coconut curry and served with chappati and prata is a simple yet wonderfully delicious meal.

Ingredients for Indian Fish Curry:
• 4 pcs batang fish
• 3 tblspn Fish Curry Powder
• 1 medium size tomatoes, halved
• 2 brinjal
• 2 green chillies
• ½ cup of thick coconut milk
• Tamarind juice to taste
• 3 cups of water
• 6 tbsp oil
• Salt to taste
Seasoning A:
• 1 onion, chopped
• 6 shallots, blend
• 4 cloves garlic, blend
• 1 tbsp halba seeds
• 2 sprig of curry leaves

Directions for making Indian Fish Curry:
Heat oil in a pan, sauté seasoning “A” till slightly golden brown.
Add fish curry powder and tamarind juice, bring to boil for a few minutes.
Put in brinjals, green chillies, tomatoes, fish, thick coconut milk, water and salt, simmer for 15 minutes and then serve hot.
The curry ready to serve with Chappati or Prata…Njoy your lunch.

Dry Fishball Mee Pok

This is the first time Snow White making her own version of dry fishball mee pok. It is very different from what we usually eat at the hawker center.

Ingredients:
12 fish balls
6 shrimp (shelled and halfed)
1 carrot (sliced)
1 fish cake (sliced)
6 stalks of lecttue
1 cube ikan bili stock
2 slice ginger
2 clove garlic (minced)
salt and pepper to taste
Mee Pok
Sauce Seasoning:
1 tbsp sambal prawn
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tsp dark soy sauce
1 bowl of waters
salt & sugar to taste.

Method:
1. Boiled the Mee Pok , drained over cold water and put aside.
2. In another pot, boiled the soup with ikan bili stock and ginger.
3. When the soup boiled, add in carrot, fishball and fishcake.
4. Add in the shrimp when the carrot soften then add in salt and pepper to taste.
5. Heat oil in a wok, stir fry the garlic till fragrant then add in the sauce seasoning and let it simmer for 10min.
6. Divide the Mee Pok into serving plates, top with the cooked fishball, fishcake and lettuce, pour the cooked sauce over the Mee Pok.
7. Garnished the Mee Pok with fried shallot. Scope a bowl of soup with carrot and sprinkle some corriander into the soup.

Leggo's Wine Infused Creamy Sundried Tomato Sphaghetti


Rapunzel got drunk over this sphaghetti. This Leggo's creamy sundried tomato pasta sauce was infused with Chardonnay. This is the first time Snow White playing with it.

Saute 4 tablespoon of the sauces with chicken cubed, capsicum, shredded carrot,onion. Add in a bowl of water and let it simmer a while. Lastly add in sugar and salt to taste. Top the pan fried butter prawn on the cooked sphagetti and pour the sauces over. The sphaghetti has a sweet tomato taste with a deep favour of wine.

Try the wine infused pasta sauce if you like your food with a zest of wine favour.

Fried Bee Hoon

Ingredients:
Bee Hoon (soaked)
Prawn (washed and shelled , halved)
Carrot (shredded)
Cabbage (shredded)
2 eggs
4 garlic (minced)
4 onion (minced)
2 chilli (minced)
Seasoning (1 tbl dark sweet sauce,2 tbl soya sauce, salt, pepper and 2 tbl fish sauce mixed with half bowl of water)

Method:
1. Saute the garlic and onion till fragrant then add in the eggs and scrambled.
2. When the scrambled eggs turn slightly brown, add in the chilli.
3. Add in the prawn and fried till it cooked.
4. Then add in the carrot and cabbage and fried for a while.
5. Toss in the Bee Hoon and seasoning.
6. Continue to fried till the Bee Hoon soften and cooked.

Garnished the Bee Hoon with fried shallot and spring onion and served hot.

Nasi Lemak










Nasi Lemak, rice cook in coconut milk, with pandan leave, ginger and salt. This tradition dish is normally serve with fried ikan bilis and sambal chili, and eaten as breakfast.


Coconut Steamed Rice
1.5 cup of rice
2 small cup of coconut (dilute with water)
salt to taste
2 sliced of ginger
3 screwpine leaves (pandan leaves)

Sambal Ikan Bilis (Dried anchovies sambal)
1/2 red onion
1 clove garlic
4 shallots
20 dried chillies
1 teaspoon of belacan (prawn paste)
1/4 teaspoon of salt
2 tablespoon of sugar
1 teaspoon tamarind juice

Other ingredients
6 small kuning fish (marinate with salt and turmeric powder then fried)
1 small cucumber (cut into slices)
1/3 cup of peanut (fried without oil)
1/2 cup ikan bilis (fried)

As usual we have it with more ingredients; fried selar kuning, otak, roasted peanut, ikan bilis and slice of cucumber.

Penang Prawn Noodle

Penang Prawn Noodle is different from the tradition Prawn Noodle as the soup base is made of the prawn essence with a zest of spicy chilies.


The ingredients :


Method :
1) De shelled the 12 large tiger prawn and used the head and shell of the prawn to boil the stock with 2 slice of ginger.
2) Blend chili paste with 5 onions and 5 clove of garlic. Stirred fried the chili paste and add in some salt.
3) When the stock is boiled, dished out the shelled and scald the prawn and fish cake.
4) Add in the chili paste to the stock and favor with salt, fish sauce and rock sugar.
5) Stir fried the prawn with the chili paste and put aside.
6) Boiled and drained the kang kong and bean sprout for later used.
7) Drained the yellow noodle over the hot water and scope in a bowl, top with the prawn, fish cake, kang kong and bean spout.
8) When the soup boiled, pours over the noodle and garnished with fried shallots.

Seafood Yee Mee Soup

Seafood Yee Mee Soup, using the same recipe of fish soup. The ingredients include, sliced fish, prawn, tofu, cabbage, chye sim and tomato. This time we did not pan fried the fish but boiled in the soup directly.

The Yee Mee is boiled, drained and put aside. When the soup ready, then pour over the Yee Mee. Garnished with shallots and spring onion and the Seafood Yee Mee is ready to serve.

Pad Thai


Pad Thai is a Thai dish of stir fried rice noodles with eggs, fish sauce, tamarind juice, chili and any combination of shrimp, chicken, tofu, bean sprout and peanuts. Snow White wanted to try cooking this dish since last month but we cannot get the Thai grass noodle till this week. She cooked according to this recipe.


Hmm…the taste is there but the noodle turn out a bit soggy. This probably due to over cook while trying to fry the eggs as we did not have high heat stove.
