Turmeric Chicken

This is a simple and easy prepared dish. We did this with the reference of the recipe from this blogger but we used turmeric powder instead of fresh turmeric. It turn out quite nice.

Ingredients:
1 kampong chicken
1 tbsp turmeric powder
2 stalk lemon glass
8 medium onion
1 small piece belacan
6 dried chili
salt and oyster sauce

Method:
1. Blend the lemon grass and onion.
2. Stir fried the blended lemongrass and onion with turmeric powder, belacan and chili till fragrant.
3. Add in the chicken and lightly toss with the sauce.
4. Cover with lid and let it stew in low heat till the chicken cooked.
5. Add salt and oyster sauce to taste, let it simmer a while and the chicken is ready to serve.

Garnished with coriander and served with white rice. Snow White also fried celery with dried shrimp as side dish to make the lunch more complete.

Grilled Fish & Fried Kang Kong

Another grilled fish dish which is slightly different from what Rapunzel cooked the other day. This time we used Ikan Kembong which is much cheaper and perfect for deep frying. Simply marinate the 4 Ikan Kembongs with 2 tsp turmeric powder, 1 tbsp chili powder, 1 tsp salt and 1 tbsp oil for 15 minutes or longer. Put it into the oven and grilled till golden brown.

Snow White also make dipping sauce separately to go with the fish.
Dipping Sauce:
2 tsp lemon juice
6 chili padi, minced
3 shallots, thinly slice
1 garlic, minced
1 tsp dark sauce
2 tbsp light soy sauce

The Kang Kong is fried by Babe...but with instruction from Rapunzel.:P
1. Heat the oil in a wok, stir fry the 2 clove garlic(minced) and 3 onion(minced).
2. Add 2 tbsp chili prawn paste and stir fried till fragrant.
3. Put in the stalk of Kong Kong, stir fried till slight soft then gradually stir in the leaves.
4. Add salt, sugar and fish sauce to taste.
5. Fry for another 3 minutes and the Kang Kong is ready to serve.

The crispiness of the fish and the tanginess of the dipping sauce are great combination. Eat with white rice and the fried kang kong make a perfect lunch.

Pineapple Fried Rice with Salted Egg Crispy Prawn

This Thai Heavenly Pineapple Fried Rice is done by Rapunzel. She did not add in the raisin but it is still as heavenly yummy. If you interested can try out this recipe.

This fried rice is supposed to be a real vegetarian Thai food but we eat with Salted Egg Crispy Prawn so we not having vegetarian lunch after all. This Salted Egg Crispy Prawn goes very well with the fried rice. The recipe can get from fenying's blog.

Coca-Cola Chicken


Snow White using Coca-Cola to cook the chicken. The Coca-Cola give an intense sweet favour to the chicken and it is an easy to cook dish according to Snow White.

Ingredients:
16 pcs chicken wings
3 cloves garlic (minced)
2 cloves onion (minced)
2 slices ginger (finely shredded)
1½ tbsp soya sauce
3 chili padi (finely chopped)
1 cup coca-cola
Seasoning :
2 tbsp soya sauce
1 tsp cooking wine
½ tsp five spices powder
½ tsp salt
Pepper to taste

Method:
1. Marinate the chicken wings with the seasoning for 1 hour.
2. Pre-heat the pan, add a little oil to fry the chicken wings until golden brown. Dish out and set aside.
3. In the same pan, saute the garlic, onion, ginger & chili till fragrant.
4. Add in the fried chicken wings and stir fried till well combined.
5. Pour in the coca-cola. Simmer in medium heat until the sauce dry up.

Serve the chicken with white rice and fried some Chye Sim to go with it.

Pattaya Fried Rice



















Pattaya fried rice, a Thailand cuisine made by covering chicken fried rice in the omelet shaped like pouch. We did not manage to cover the fried rice with the omelet except Rapunzel, so you can guess from above which plate belong to Rapunzel.

Ingredients:
2 cup of rice (cooked)
1 bowl of mixed vegetables(green peas,sweet corns & carrots)
2 pieces chicken fillet (cubed)
1/2 cup yellow capsicum (cubed)
2 small chilies (minced)
2 shallots (minced)
2 cloves garlic (minced)
2 tbsp ketchup
3 tbsp fish sauce
salt and pepper to taste
pinch of dried basil
4 eggs (beaten)-omelet

Method:
1. Heat oil in a wok and stir fried the shallots, garlic and chilies till fragrant.
2. Add in chicken, mixed vegetables and capsicum, stir fried till the chicken is cooked and the vegetable turn soft.
3. Stir in the rice and fried till all ingredients are thoroughly mix. Add in ketchup, fish sauce, salt and pepper to taste.
4. Continue to fry for another 2 minutes and check seasoning.
5. Dish the rice out and pan fried omelet.
6. When the omelet done, put a bowl of the fried rice at the center and wrap up, flip it over a serving plate.

Sprinkle some chicken floss or bacon, spring onion and fried shallots, top with some slices of cucumber and tomato, Pattaya Fried Rice is ready to serve.

麻油姜丝鸡 (Sesame Ginger Chicken)

又是姜丝又是麻油的,像是在坐月子吧。很喜欢这道菜因为好爱姜丝与麻油的香味,冷天吃还可暖身子。

材料:

1. 鸡小腿 16只
2. 腌料:酱清,蚝油,胡椒粉,盐
3. 麻油
4. 姜丝
5. 蒜头 5 瓣 (剁碎)
6. 洋葱 1粒 (切粒)

做法:

1. 把鸡肉和腌料放在盘上混合均匀, 腌约30分钟.
2. 煎香鸡肉至金黄色,放一旁.
3. 用麻油爆香姜丝,放入葱头和蒜头,然后下鸡翻炒大约3分钟.
4.下调味料(黑酱油,酱油还有盐巴,糖少许)
5. 适量的加水,慢慢炒到肉软汁干即可。


上菜时加点青葱和芫茜既可。

Green Curry Chicken

Green Curry is a popular thai cuisine which is one of Babe's favourite dish. The curry can be as hot as red curry but with a zest of sweetness like mee soto.

Rapunzel used to blend the green curry paste herself but it is quite time consuming so we get the ready pack paste from supermarket.

Ingredients:
1 packet of Asian Home Gormet Green Curry
9 chicken drumlets
1/2  teaspoon of dried basil leave
4 lady fingers
1/2 red capsicum
1 sprig coriander leaves, chopped
1 Tbsp oil
200ml water

Method:
1 Heat oil in a saucepan or wok and fry the green curry paste for one minute over medium high heat.
2 Stir in chicken until well coated and chicken is half-cooked – three minutes. Reduce heat to medium, then pour over coconut milk followed by 200 ml water.
3 Add lady finger and capsicum, cook for 15minutes then sprinkle coriander leaves and basil leaves. Green Curry Chicken is ready to serve.

The Green Curry Chicken go very well with rice. Snow White also fried a plate of mixed vegetables (bean sprouts, 1/2 red capsicum, 2 stalk of celery, 1/2 carrot--leftover stock in the fridge) with salted fish to go with it. Look at the color combination, very appetising!

Nasi Lemak










Nasi Lemak, rice cook in coconut milk, with pandan leave, ginger and salt. This tradition dish is normally serve with fried ikan bilis and sambal chili, and eaten as breakfast.


Coconut Steamed Rice
1.5 cup of rice
2 small cup of coconut (dilute with water)
salt to taste
2 sliced of ginger
3 screwpine leaves (pandan leaves)

Sambal Ikan Bilis (Dried anchovies sambal)
1/2 red onion
1 clove garlic
4 shallots
20 dried chillies
1 teaspoon of belacan (prawn paste)
1/4 teaspoon of salt
2 tablespoon of sugar
1 teaspoon tamarind juice

Other ingredients
6 small kuning fish (marinate with salt and turmeric powder then fried)
1 small cucumber (cut into slices)
1/3 cup of peanut (fried without oil)
1/2 cup ikan bilis (fried)

As usual we have it with more ingredients; fried selar kuning, otak, roasted peanut, ikan bilis and slice of cucumber.

Pandan Chicken with Rice and Fried Lady Finger

Rapunzel found this Chicken wrapped in Pandan leaf recipe from the Real Thai Recipes. Due to our limited utensil, Snow White make some changes.


Marinate the chicken with white pepper,garlic,white sugar, light soy sauce, cooking rice wine, sesame oil and coriander roots for an hour.





Fold the pandan wrap :

Start with the non-shiny side up
Fold the bottom-end up and over
Fold the top-end down and through
Pull to make tight




Flip over, and pick up the top-end
Bring through the top-layer and pull tight










Wrapped the chicken into the pandan leaf.







Deep fried the chicken till golden brown.









Unwrapped the leaf and top with the black sauce before served. The lady finger is stir fired with chili balacan. The chicken is juicy and the lady finger is spicy and crunchy, they go will together with the white rice.

Salted Fish Fried Rice

As simple as it is, Salted Fish fried rice, with vegetables, salted fish, eggs, or any combination of the ingredients above and more. Regardless of the recipes, fried rice always pleases Rapunzel taste and appetite. A good fried rice calls for overnight rice. Keep it in your fridge overnight, and you will have the perfect overnight rice for Salted fish fried rice. But for today we use Japanese Rice which it could not be right because the rice is quite sticky and soft. Anyway this is Snow White Salted Fish fried rice recipe and it’s always have the right taste but only for the rice.

Ingredients:
3 bowls overnight rice
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon sesame oil
3 small chilli (finely chopped)
2 inch of kurau salted fish
2 small onion (finely chopped)
2 cloves garlic (finely chopped)
2 eggs (light beaten)
salt to taste

Method:
Heat up a wok with two tablespoons of oil. Add salted fish and fry until aromatic, set aside. Using the same oil, saute the garlic & onions until aromatic. Add in vegetables and stir fry until they are half cooked. Season with salt and continue to stir-fry until they are cooked. Add in the rice and stir well with the ingredients. Add in soy sauce, fish sauce, sesame oil, white pepper powder and continue to fry the rice for a couple of minutes. Make a “well” in the middle of the wok and pour the beaten eggs then cover the “egg well” with rice. Leave it for a few seconds and continue to stir-fry the fried rice so the eggs form small pieces and mix well with the fried rice. Add in the fried salted fish and do some quick stirs, dish out and serve the fried rice hot.

Potato Chicken & Fried Celery with Rice

The celery is sautéed with minced garlic, dried prawn and a tablespoon of oyster sauce. Babe does not really like the taste of raw celery but when fried with dried prawn, the celery taste crunchy and sweet.


Fried the potato and put aside for later used. Stir fried the garlic, big onion then add in the chicken. When the chicken turned white, add in the fried potato. Reduce the heat and add in water, oyster sauce, dark sauce and salt to taste. Let it simmer for 30min or more till the chicken become tender and the potato turn soft. Before served, stir in the spring onion. The sauce is thickened by the potato and it is very appetizing to eat with white rice.

Chicken Porridge with Fried Egg

We have chicken porridge today. This is the first time using the short grain rice to cook the porridge and it turn out smoother then the normal rice.

Ingredients:
1 cup of peanut, soaked
1 preserve egg
2 slice of ginger
1 cup of short grain rice, wash and drained then marinate with pinch of salt and oil.
Cubed a cup of chicken fillet and marinate with salt and pepper

Method
1) Boiled the water with ginger and peanut.
2) Add in the rice when water boiled.
3) When the rice turn soft add in the chicken.
4) Add in a pinch of salt, pepper and dash of sesame oil when the porridge almost cooked.
5) Stir in the preserve egg before serve.
Garnish the porridge with shallots, spring onion, fried white baits and a small piece of fermented bean curd. Top the porridge with fried eggs. The eggs are fried with big onion, dried prawn, mince garlic and chili.

Sushi

We have sushi today since there is still some balance of seaweed. This time we managed to get ready packed Unagi from the supermarket so can make more variety of sushi.
