Bubor Terigu With Sago

BUBOR TERIGU WITH SAGO

Today our dessert bubor terigu (malay word) also called as a wheat in a sweet savoury. Delicious and creamy with coconut milk, it makes a complete meal for Rapunzel today. Snow White got a very good talent in cooking dessert for us, thumb up for her. If you like to try, then just grap a half bowl of wheat (soaked for 1 hour), Sago 3 tablespoon (to be boiled earlier till floated and dished out), 100ml coconut milk (you may add more coconut if you like creamier) 700ml of water , gula melaka (add to your own taste of sweetness) and a pinch of salt, pandan leave. Washed the wheat and bring to boil with pandan leave, when the wheat soften add gula melaka till dissolve. Lastly add coconut milk and salt and cooked sago, boil a little while and ready to serve.

Spaghetti with Prawn

This is a really, really simple spaghetti with prawn which we uses ingredients that we always have on hand. As we just uses the sauce from the can, so amounts are approximate. We have cook this before, so we just try out the same style as before. Anyway only Rapunzel and Snow White having lunch together. Babe where are you????

Ingredients

  • 12 large Prawn (unshelled, marinate with salt and pepper)
  • 6 whole button mushroom (halves)
  • 1 small onion, minced
  • 1 garlic cloves, minced
  • 1 Green Capsicum
  • Celery
  • 1 small cans traditional pasta sauce
  • 1 cups water (for simmering for flavors to meld)
  • 1 teaspoons dried basil
  • 1 teaspoons dried parsley flakes
  • 1/2 teaspoon fresh rosemary
  • 1/4-1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon fresh coarse ground black pepper
  • 2 serving of thin spaghetti
  • 1 sprig of coriander for garnishing

Directions

In a frying pan, fried prawn till brown then put aside. Then fried garlic and onion till brown follows with carrot, celery and capsicum.
Add pasta sauce and water. Add basil, parsley,rosemary,crushed red pepper, and black pepper.
Stir well and barely bring to a boil. Simmer on low heat and stir frequently.
Cook spaghetti according to your serving.
Spoon sauce over drained spaghetti noodles and sprinkle with garnishing.

Chicken Yam Rice

Since there is some yam left over from Bubor Cha Cha, Snow White used it to cook Yam Rice. This is a filling and satisfactory one dish meal which you did not have to cook anything to go with it.

Ingredients:

  • Half cup of cubed yam
  • Skinless chicken thigh (diced)
  • Half bowl of dried shrimp(washed)
  • Ginger (strips)
  • Garlic(chopped)
  • Onion(chopped)
  • Lettuce (shredded)
  • 2 cup of short grain rice (washed & strained)
  • Shallot & coriander for garnishing

Method:

1. Season the chicken and yam with five spice powder, salt and pepper.

2. Fry the shallots till golden brown and set aside.

3. Stir fry the dried shrimp, garlic and onion till fragrant. Add in the chicken and yam stir fry till the chicken turn colour then add in the rice together with the seasoning of dark soya sauce, light soya sauce, oyster sauce and pepper.

4. Once the rice is evenly coated with the seasoning, remove and place into rice cooker and fill up enough water to cover the rice.

5. When the rice cooked, serves with lettuce and garnished with some coriander and fried shallots.

Yong Tau Fu Thai Laksa Bee Hoon Soup

The name look fancy ya, actually it is simple to cook according to Rapunzel. To Babe cooking is always difficult but to Snow White and Rapunzel it seemed to be a simple task, wonder why? Anyway, Laksa is Babe all timed favorite, so may it be Penang or Nyonya or Thai Laksa, I empty my bowl within 15minutes. It just simply delicious!

Don't believe me, try this recipe yourself.

Ingredients:

  • Assorted ready made yong tau fu (as usual, pan fried first)
  • Thick Bee Hoon
  • 1 tbsp dried prawns
  • 1 tbsp Curry powder
  • 1 stalk laksa leaf
  • 1 tbsp chili paste
  • 150ml coconut milk
  • 2 Tom Yam cubes
  • 2 kaffir lime leaves (finely shredded)
  • mint leaves for garnishing
Methods:
1. Bring the Bee Hoon to boil and scope into bowl for later used.
2. Wash and pound dried prawns. Heat oil and saute dried prawns, chilli paste and curry powder until fragrant. Add water, coconut milk, laksa leaf and tom yam cubes.
3. Boil for 15 minutes. Add yong tau fu to soup and cook for 5 minutes or until cooked. Add kaffir leaves and fish sauce to taste.
4. Scope the soup into the Bee Hoon and garnished with mint leaves. Yong Tau Fu Thai Laksa Bee Hoon Soup is ready to serve.

Lemongrass Spicy Chicken

Today our menu is Lemongrass Spicy Chicken, Snow White is the cook. This is quite an exotic recipe, a wonderful combination of flavours that develop and permeate the chicken as it cooks very slowly. The cooking takes about 45 mins or so to prepare from start to finish. Serve it with rice. If you like, fried cabbage with chives will be nice to go with.



INGREDIENTS

  • 12 pcs mid-joint chicken wings
  • 2 tablespoons canola oil
  • 1 plump stalks of lemongrass, tender white inner bulb only, cut coarsely
  • 1 small red onion, minced
  • 3 cloves garlic, minced
  • 3 sliced ginger
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark sauce
  • 1 tablespoon Fish sauce
  • 5 small dried red chillies, cut half
  • 1 large capsicum, seeded and sliced cubed
  • Half cup of water
  • Salt and sugar to taste

DIRECTIONS

Heat the oil in the skillet. Add the lemongrass, onion, garlic, ginger and cook over high heat, stirring until fragrant. Add the dark sauce, oyster sauce, fish sauce, dried chillies, water; bring to a boil. Add the chicken to the sauce and simmer until heated through, lastly add capsicum. Simmer awhile then serve.

Bubor Cha Cha

We do cha cha today! Ha, not referring to the dance. It is a Malay nyonya dessert, sweet soup with yam and sweet potato cubes boiled together in coconut milk. Not sure of it correct name, Borbor, Bubur or Bobo....anyway Rapunzel said it is Bubor so let just stick to Bubor Cha Cha.

Steam the cubed yam and sweet potato till soft. Put the ready packed tapioca cubes (can be find in most supermarket) in boiling water, when all the cubes floated up, dish up and rinse under cold water. Boiled a pot of water with 4 tablespoon of sugar and 3 pandan leaves, when the sugar dissolved add in the steamed yam, sweet potato and tapioca cubes. Add in 100ml coconut milk and mixed well. When cooked, add in a pinch of salt and off the fire. Bubor Cha Cha is ready to serve.

Fishball Soup with Egg Noodle

Fish ball soup is common in most hawker center. It is a tasty and healthy dish but Babe not a fan of fish ball soup. Fish ball soup is Rapunzel's all time favorite.

Our homemade fish ball soup got more ingredients then the hawker's version. The soup base is more or less same as the fish beehoon soup but without adding the evaporate milk. This time we used egg noodle (金蛋面), and with different ingredients; fish ball, wong bak (娃娃菜),carrot, quail egg, tofu and tau pok.
